Bosso Distillery, founded in 1888, is a historic family-run business now in its fifth generation of master distillers. Located in Cunico (AT), in the heart of Monferrato, the distillery is renowned for producing high-quality grappa, obtained through careful control of raw materials and traditional distillation processes.

The grappa is produced using fresh, top-quality pomace from nearby Piedmontese vineyards. Red grape pomace, already fermented, is distilled fresh or stored in hermetic silos to prevent spoilage. White grape pomace, unfermented, is stored in controlled environments to allow fermentation. The pomace is preserved in silos or small plastic big bags for small batches, ensuring the integrity of the raw material.

The discontinuous 
steam method

 

The distillery uses the traditional discontinuous steam method in copper stills. This slow and labor-intensive process allows for the production of high-quality grappa, with a perfect balance of taste and aroma. The master distiller selects the “heart” of the distillate, discarding the “heads” and “tails” to ensure the purity of the product. Recently, a bain-marie still in the Trentino style has been introduced to produce even more aromatic and smooth grappas.

Aging

 

Aging varies from a minimum of 2 years to over 30 years, with careful selection of wood types to achieve the best organoleptic combinations between aroma and bouquet.

Le Quotidiane – Young, fresh, and fragrant grappas, ideal for daily consumption and for those seeking an authentic taste of Piedmontese tradition.

I Vitigni – Single-varietal grappas that enhance the organoleptic characteristics of selected grapes such as Moscato, Barbera, and Nebbiolo.

La Rionda – A line of aged grappas, matured in fine wood casks. The flagship is the 12-year-old Moscato Grappa, vintage 1982, a true rarity for connoisseurs.

I Liquori Bosso – A selection of artisanal liqueurs, including the Bosso Amaro, made according to an ancient family recipe with over 20 botanicals, offering a unique and balanced taste.

PI-GIN Bosso – A high-quality artisanal gin, blending selected botanicals for a refined sensory experience.

Sustainability

 

Sustainability is at the core of Bosso Distillery’s practices, which actively adopts eco-friendly solutions, such as energy efficiency, optimized water consumption, and the valorization of by-products.

Additionally, the distillery supports a short supply chain, prioritizing local raw materials and supporting Piedmontese producers.
